Rudi’s Sel de Mer ‘Pop Up’ Restaurants To Be Introduced On Holland America Ships

In a move to honour Master Chef and culinary consultant Rudi Sodamin, Holland America are roll out his French Brasserie as ‘pop up’ restaurants  on six more of their ships.

Eurodam, Nieuw Amsterdam, Noordam, Oosterdam, Westerdam and Zuiderdam will see ‘Rudi’s Sel de Mer’ appear in the Pinnacle Grills. He also has a restaurant called Sel de Mer on board Koningsdam.

According to a statement released by Carnival Corporation, the new restaurant will feature custom décor, plates, menus and uniforms and will build on the menu of  French dishes which will reflect the ambiance of the restaurant on board Koningsdam.  A specially crafted cocktail and wine menu also will be featured. Rudi’s Sel de Mer will be offered once on seven-day cruises and twice on cruises longer than 10 days.

“Sel de Mer onboard Koningsdam is extremely popular among our guests and one of the most talked about dining experiences in the industry,” said Orlando Ashford, president of Holland America Line. “The restaurant showcases our commitment to providing our guests with unrivaled dining options, and launching it as Rudi’s Sel de Mer on six more ships as a pop-up will allow more of our guests to see what the buzz is all about and indulge in its phenomenal cuisine.”  Said Holland America in their statement.

On offer at Rudi’s Sel d Mer, guests will be able to enjoy a selection of French seafood dishes, including an ‘amusebouche of Seared Scallops on Seaweed Salad and Light Saffron Vinaigretter Foam’. Also on offer will be Steak Tartare, Bouillabaisse Marseillaise, a special dish of Rudi’s Seafood Tower and a classic Fruits de Mer, which will be able to serve two guests.

For the main course, there will be the chance to enjoy entrees such as Broiled Maine Lobster, Dover Sole Meuniere, Duck Cassolulet, Steak Frites, Souffle au Fromage and Rack of Lamb Persillade. Freshly sourced fish dishes compliment the menu choices and to accompany the dishes, guests will be served French fries, cauliflower puree, green beans, wild rice, truffled mashed potatoes and ratatouille.

Decadence for dessert will be a speciality at Rudi’s Sel de Mer. Guests will have the choice of delicious sweets to roundly finish off the fine meal, including Crepes Suzette, Apple Tarte Tatin, Profiteroles with Hot Chocolate Sauce, Rudi’s famous Souffle (a version of the Salzburg Nockerl) and a selection of the finest French cheeses.

There will be a cover charge of $49 per person for guests to dine at Rudi’s Sel de Mer and reservations in advance are highly reccomended to avoid disappointment.
Implementation of the new ‘pop up’ restaurant will be staggered amongst the six ships in 2017 with Nieuw Amersterdam the first to offer the new dining option starting 31st March, followed by Oosterdam on 11th May, Eurodam on 24th May,  Westerdam 12th June, Noordam 2nd October and finally Zuiderdam on 10th November.
